The Irish Mule: A Mourne Dew Cocktail Recipe

The Moscow Mule is a classic for a reason — but swap the vodka for Mourne Dew Irish spirits and you've got something even better. The Irish Mule is a bold, zingy cocktail that works beautifully with both our gin and our poitín, and it's become one of our favourite serves at the distillery. Here's how to make it.

The Mourne Dew Irish Mule (Gin Version)

Bright, botanical, and refreshingly spicy — this is the gin lover's answer to the classic mule.

Ingredients (serves 1):

  • 50ml Mourne Dew Irish Gin
  • 20ml fresh lime juice
  • 120ml ginger beer (use a good quality, fiery one)
  • Ice
  • Garnish: lime wedge and a sprig of fresh mint

Method: Fill a copper mug (or a tall glass) with ice. Add the gin and lime juice, then top with ginger beer. Give it a gentle stir, garnish with lime and mint, and serve immediately. The botanicals in our gin play brilliantly against the heat of the ginger — it's a match made in the Mournes.

The Poitín Mule

For something with a bit more edge, try the poitín version. It's earthy, complex, and utterly addictive.

Ingredients (serves 1):

  • 50ml Mourne Dew Poitín
  • 20ml fresh lime juice
  • 10ml honey syrup (equal parts honey and warm water, stirred)
  • 120ml ginger beer
  • Ice
  • Garnish: lime wheel and candied ginger

Method: Combine the poitín, lime juice, and honey syrup in a copper mug over ice. Top with ginger beer and stir gently. Garnish with a lime wheel and a piece of candied ginger for an extra kick.

Why Ginger Beer?

The key to a great mule is the ginger beer — not ginger ale. You want something with real heat and depth. Look for craft ginger beers with a strong ginger flavour; they'll stand up to the character of our spirits and create a cocktail that's genuinely exciting.

Make It a Round

The Irish Mule is incredibly easy to scale up for a crowd. Simply multiply the ingredients and mix in a large jug, then pour over ice into individual mugs. It's the perfect cocktail for a summer gathering or a casual evening with friends.
